Baking brownies!

Who doesn’t love a brownie with its crispy top and fudgy centre? Here I’ve added a fruity twist to the classic brownie recipe by using dark chocolate orange whilst salted peanuts stand in for the usual walnuts to create a delicious sweet and salty flavour-packed bake. This recipe makes 18 decent sized brownies but the recipe can easily be halved.

Dark chocolate orange brownie


Ingredients:

200g butter

200g sugar

3 eggs

125g plain flour

50g cocoa powder

250g orange-flavoured dark chocolate

100g smashed salted peanuts (optional)

 
Chocolate Orange Brownie

Method:

Pre-heat the oven to 160 degrees or 140 degrees fan assisted oven.

Grease and line a baking tin (at least 2cm deep) with parchment/baking paper.

In a pan melt together the butter and chocolate on the lowest heat. Take the pan off the heat once melted.

In a mixing bowl whisk together the sugar and eggs until light, pale and fluffy.

Pour in the melted chocolate mixture and stir thoroughly until everything has been combined.

Sift in the flour and cocoa powder and give the brownie batter a good stir.

Stir in the smashed-up peanuts, if using.

Pour the brownie batter into the baking tin, smooth the top and you’re ready to go.

Bake for 20-25 minutes making sure to not overbake so you can achieve the delightful crispy top and squidgy center.

Allow the brownies to cool in the tin (if you can wait that long) before cutting into giant squares.
